Organic sourcing

Almond flour is worth sourcing organic as almond trees are often treated with pesticides. Cocoa powder, while not on the Dirty Dozen, can have quality benefits when organic.

Ingredients

  • 1 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon sea salt
  • 1/2 cup unsalted butter
  • 3/4 cup cane sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips
  • 1/4 cup chopped walnuts

Method

  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. In a bowl, whisk together the almond flour, cocoa powder, baking powder, and sea salt.
  3. In a saucepan, melt the butter over low heat, then mix in the sugar until dissolved. Let it cool slightly.
  4. Stir the eggs and vanilla extract into the butter mixture until combined.
  5. Add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Fold in the dark chocolate chips and walnuts, then pour the batter into the prepared baking pan.
  7. Smooth the top with a spatula and bake for 18-22 minutes, or until a toothpick inserted into the center comes out mostly clean.
  8. Let the brownies cool in the pan before cutting into squares.

Notes

  • For a nut-free variation, omit the walnuts.
  • These brownies can be stored in an airtight container for up to 4 days.
  • Serve with a scoop of vanilla ice cream for added indulgence.
