Almond flour is worth sourcing organic as almond trees are often treated with pesticides. Cocoa powder, while not on the Dirty Dozen, can have quality benefits when organic.
Ingredients
- 1 cup almond flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon sea salt
- 1/2 cup unsalted butter
- 3/4 cup cane sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup dark chocolate chips
- 1/4 cup chopped walnuts
Method
- Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
- In a bowl, whisk together the almond flour, cocoa powder, baking powder, and sea salt.
- In a saucepan, melt the butter over low heat, then mix in the sugar until dissolved. Let it cool slightly.
- Stir the eggs and vanilla extract into the butter mixture until combined.
- Add the dry ingredients to the wet ingredients, stirring until just combined.
- Fold in the dark chocolate chips and walnuts, then pour the batter into the prepared baking pan.
- Smooth the top with a spatula and bake for 18-22 minutes, or until a toothpick inserted into the center comes out mostly clean.
- Let the brownies cool in the pan before cutting into squares.
Notes
- For a nut-free variation, omit the walnuts.
- These brownies can be stored in an airtight container for up to 4 days.
- Serve with a scoop of vanilla ice cream for added indulgence.
