Ingredients
- 8 slices bacon
- 4 large eggs
- 1/2 cup grated cheddar cheese
- 1/4 cup chopped green onions
- to taste salt
- to taste black pepper
Method
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, partially cook the bacon until just beginning to brown but still pliable.
- Place each slice of bacon around the sides of non-stick muffin cups, creating a ring. Repeat for all muffin cups.
- Crack an egg into each bacon-lined muffin cup.
- Sprinkle with salt, pepper, and a portion of the cheddar cheese.
- Bake in the oven for 15-20 minutes, until the eggs are set to your preferred doneness.
- Remove from the oven and let rest for a few minutes.
- Garnish the top with fresh chopped green onions before serving.
Notes
- Use any type of cheese you prefer in place of cheddar.
- For a spicier version, add chopped jalapeños on top.
