Organic sourcing

Eggs are worth buying organic for higher quality and better animal welfare. Green onions tend to absorb pesticides, making organic a smarter choice here.

Ingredients

  • 8 slices bacon
  • 4 large eggs
  • 1/2 cup grated cheddar cheese
  • 1/4 cup chopped green onions
  • to taste salt
  • to taste black pepper

Method

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, partially cook the bacon until just beginning to brown but still pliable.
  3. Place each slice of bacon around the sides of non-stick muffin cups, creating a ring. Repeat for all muffin cups.
  4. Crack an egg into each bacon-lined muffin cup.
  5. Sprinkle with salt, pepper, and a portion of the cheddar cheese.
  6. Bake in the oven for 15-20 minutes, until the eggs are set to your preferred doneness.
  7. Remove from the oven and let rest for a few minutes.
  8. Garnish the top with fresh chopped green onions before serving.

Notes

  • Use any type of cheese you prefer in place of cheddar.
  • For a spicier version, add chopped jalapeños on top.
