Ingredients
- 1 kg pork loin
- 8 slices bacon
- 2 apples, cored and sliced
- 1 tbsp olive oil
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1 tbsp fresh rosemary, chopped
- 1 tbsp Dijon mustard
Method
- Preheat oven to 200°C (400°F).
- Rub the pork loin with olive oil, sea salt, black pepper, and chopped rosemary.
- Spread Dijon mustard over the seasoned pork loin evenly.
- Wrap the bacon slices around the pork loin, securing with toothpicks if needed.
- In a roasting pan, arrange the apple slices around the bacon-wrapped pork loin.
- Roast in the preheated oven for about 1 hour, until the bacon is crispy and the pork is cooked through.
- Let the cooked pork loin rest for 10 minutes before slicing and serving with roasted apples.
Notes
- For extra flavor, use smoked bacon.
