Organic sourcing

Apples are on the Dirty Dozen list — worth sourcing organic to avoid pesticide residue. Organic rosemary is recommended for full flavor and fewer chemicals on fresh herbs.

Ingredients

  • 1 kg pork loin
  • 8 slices bacon
  • 2 apples, cored and sliced
  • 1 tbsp olive oil
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp Dijon mustard

Method

  1. Preheat oven to 200°C (400°F).
  2. Rub the pork loin with olive oil, sea salt, black pepper, and chopped rosemary.
  3. Spread Dijon mustard over the seasoned pork loin evenly.
  4. Wrap the bacon slices around the pork loin, securing with toothpicks if needed.
  5. In a roasting pan, arrange the apple slices around the bacon-wrapped pork loin.
  6. Roast in the preheated oven for about 1 hour, until the bacon is crispy and the pork is cooked through.
  7. Let the cooked pork loin rest for 10 minutes before slicing and serving with roasted apples.

Notes

  • For extra flavor, use smoked bacon.
  • Try sweet or tart apple varieties according to preference.
  • Leftovers make great sandwiches.
