Organic sourcing

Apples are on the Dirty Dozen list due to pesticide residues—worth sourcing organic. Walnuts are a good organic option to avoid potential pesticide residues.

Ingredients

  • 4 medium-sized apples, such as Granny Smith or Honeycrisp
  • 1/4 cup walnuts, chopped
  • 2 tbsp raisins
  • 2 tbsp honey
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 cup water

Method

  1. Preheat your oven to 180°C (350°F).
  2. Core the apples, creating a cavity in the center, but leaving the bottom intact.
  3. In a small bowl, mix the walnuts, raisins, honey, ground cinnamon, and ground nutmeg.
  4. Fill each apple cavity with the walnut mixture, packing it tightly.
  5. Place the filled apples in a baking dish and pour water into the bottom of the dish.
  6. Bake in the preheated oven for 30-35 minutes, until the apples are tender.
  7. Let the apples cool slightly before serving.

Notes

  • For a nut-free option, use sunflower seeds instead of walnuts.
  • These baked apples pair well with a scoop of coconut ice cream.
  • Adjust honey quantity based on apple sweetness.
