Organic sourcing

Apples are high in pesticide residue according to the EWG Dirty Dozen list, so it's worth sourcing them organic for this recipe. Walnuts and raisins have modest organic benefits.

Ingredients

  • 4 large apples
  • 1/4 cup chopped walnuts
  • 1/4 cup raisins
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 tbsp maple syrup
  • 1 tbsp lemon juice
  • 1/4 cup water

Method

  1. Preheat your oven to 350°F (175°C).
  2. Core the apples, leaving about half an inch at the bottom to contain the filling.
  3. Mix the walnuts, raisins, cinnamon, nutmeg, and maple syrup in a bowl.
  4. Stuff the apple cavities with the walnut mixture.
  5. Place the apples in a baking dish and drizzle them with lemon juice.
  6. Pour the water into the bottom of the baking dish.
  7. Bake the apples for 35-40 minutes until tender, basting occasionally.
  8. Let the apples cool slightly before serving.

Notes

  • You can substitute pecans for walnuts if preferred.
  • Serve with a scoop of dairy-free ice cream for an indulgent treat.
