Berries are on the EWG Dirty Dozen list due to pesticide residues, so sourcing them organic is beneficial. Chia seeds have less residue concern.
Ingredients
- 2 cups mixed fresh berries (like strawberries, raspberries, blueberries)
- 2 tbsp chia seeds
- 1-2 tbsp maple syrup (to taste)
- 1 tsp lemon juice
- 4 slices whole grain bread
Method
- Wash the berries thoroughly and pat them dry.
- In a medium saucepan over medium heat, combine the berries and lemon juice.
- Cook for about 5-8 minutes, stirring occasionally, until the berries break down and become syrupy.
- Mash the berries with a fork or potato masher to your desired consistency.
- Stir in the chia seeds and maple syrup, combining well.
- Remove the pan from the heat and let the mixture cool to thicken, about 10-15 minutes.
- Toast the whole grain bread slices until golden brown.
- Spread the cooled chia jam over the warm toast and serve immediately.
Notes
- Use any combination of berries like blackberries, raspberries, or strawberries.
- Adjust the sweetness by adding more or less maple syrup to taste.
- Leftover chia jam can be stored in a sealed container in the fridge for up to a week.
