Ingredients
- 1 large head cauliflower
- 2 tbsp unsalted butter
- 2 cloves garlic
- 1/4 cup heavy cream
- to taste sea salt
- to taste black pepper
- to taste fresh parsley
Method
- Cut the cauliflower into florets and peel the garlic.
- Steam the cauliflower and garlic cloves until tender, about 10 minutes.
- Transfer the cauliflower and garlic to a food processor.
- Add the butter and heavy cream to the cauliflower in the processor.
- Blend until smooth and creamy, seasoning with salt and pepper.
- Taste and adjust seasoning if needed.
- Garnish with freshly chopped parsley before serving.
Notes
- For a dairy-free version, substitute butter with olive oil and cream with coconut milk.
- Serve with roasted meats or grilled vegetables for a complete meal.
