Organic sourcing

Cauliflower is moderately pesticide-heavy; choosing organic can be beneficial. Fresh herbs like parsley also often contain residues, making organic a better choice.

Ingredients

  • 1 large head cauliflower
  • 2 tbsp unsalted butter
  • 2 cloves garlic
  • 1/4 cup heavy cream
  • to taste sea salt
  • to taste black pepper
  • to taste fresh parsley

Method

  1. Cut the cauliflower into florets and peel the garlic.
  2. Steam the cauliflower and garlic cloves until tender, about 10 minutes.
  3. Transfer the cauliflower and garlic to a food processor.
  4. Add the butter and heavy cream to the cauliflower in the processor.
  5. Blend until smooth and creamy, seasoning with salt and pepper.
  6. Taste and adjust seasoning if needed.
  7. Garnish with freshly chopped parsley before serving.

Notes

  • For a dairy-free version, substitute butter with olive oil and cream with coconut milk.
  • Serve with roasted meats or grilled vegetables for a complete meal.
