Ingredients
- 2 large eggs
- 1 cup shredded mozzarella cheese
- 1 tbsp almond flour
- a pinch sea salt
- a pinch ground black pepper
- 2 tbsp butter or coconut oil for greasing
Method
- Preheat a waffle iron to medium-high heat.
- In a bowl, beat the eggs until fully combined.
- Add the shredded mozzarella, almond flour, salt, and pepper to the eggs. Mix until well combined.
- Grease the waffle iron with butter or coconut oil.
- Pour half of the egg and cheese mixture onto the waffle iron, spreading it evenly.
- Close the waffle iron and cook for about 3-4 minutes until golden brown and crisp.
- Carefully remove the chaffle and repeat with the remaining batter.
Notes
- For a crisper texture, cook the chaffles a bit longer in the waffle iron.
- You can substitute cheddar or other cheeses for a different flavor.
