Organic sourcing

Eggs and mozzarella benefit from being organic due to higher welfare standards for livestock. The almond flour doesn't significantly differ between organic and conventional.

Ingredients

  • 2 large eggs
  • 1 cup shredded mozzarella cheese
  • 1 tbsp almond flour
  • a pinch sea salt
  • a pinch ground black pepper
  • 2 tbsp butter or coconut oil for greasing

Method

  1. Preheat a waffle iron to medium-high heat.
  2. In a bowl, beat the eggs until fully combined.
  3. Add the shredded mozzarella, almond flour, salt, and pepper to the eggs. Mix until well combined.
  4. Grease the waffle iron with butter or coconut oil.
  5. Pour half of the egg and cheese mixture onto the waffle iron, spreading it evenly.
  6. Close the waffle iron and cook for about 3-4 minutes until golden brown and crisp.
  7. Carefully remove the chaffle and repeat with the remaining batter.

Notes

  • For a crisper texture, cook the chaffles a bit longer in the waffle iron.
  • You can substitute cheddar or other cheeses for a different flavor.
