Ingredients
- 500 g broccolini
- 3 tbsp extra-virgin olive oil
- 1 lemon, juiced and zested
- 1 red chili, thinly sliced
- 2 cloves garlic, thinly sliced
- to taste sea salt
- to taste freshly ground black pepper
Method
- Trim the broccolini, removing tough ends.
- Heat a grill pan over medium-high heat and drizzle with 1 tbsp olive oil.
- Add the broccolini to the hot grill pan.
- Cook for 5-6 minutes, turning occasionally until charred and just tender.
- Reduce the heat to medium; add 2 tbsp olive oil, garlic, and chili to the pan.
- Cook for another 1-2 minutes until the garlic is golden and fragrant.
- Remove from heat and immediately drizzle with lemon juice.
- Season with sea salt and freshly ground black pepper to taste.
- Transfer to a serving platter and garnish with lemon zest.
Notes
- Substitute regular broccoli if broccolini is unavailable.
- Use a grill for deeper charred flavor.
- Serve alongside grilled meats or plant-based protein.
