Ingredients
- 2 tbsp extra-virgin olive oil
- 1 large onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 medium zucchini, diced
- 400 g canned diced tomatoes
- 1.5 l vegetable stock
- 1 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 cup cooked cannellini beans
- 100 g green beans, chopped
- 150 g leafy greens (spinach or kale)
- Salt and pepper to taste
- 1 cup small pasta (such as ditalini or small shells)
Method
- Heat the olive oil in a large pot over medium heat.
- Add the onion, carrots, and celery, cooking until they soften.
- Stir in the garlic and cook for another minute until fragrant.
- Add the zucchini, canned tomatoes, vegetable stock, and tomato paste.
- Stir in the oregano and basil, bringing the mix to a simmer.
- Let the soup simmer for 20 minutes, allowing flavors to meld.
- Add the cannellini beans, green beans, and pasta, cooking until pasta is al dente.
- Stir in the leafy greens, cooking until wilted.
- Season the soup with salt and pepper to taste before serving.
