Organic sourcing

Avocados are often treated with multiple pesticides; going organic reduces exposure. Cocoa powder can also have residues — opt for organic if available.

Ingredients

  • 2 ripe avocados
  • 100 g dark chocolate (at least 70% cocoa)
  • 1/4 cup maple syrup
  • 2 tbsp unsweetened cocoa powder
  • 1 tsp vanilla extract
  • a pinch sea salt

Method

  1. Halve the avocados, remove the pits, and scoop the flesh into a blender.
  2. In a heatproof bowl, melt the dark chocolate over a pot of simmering water. Stir until smooth and then let it cool slightly.
  3. Add the melted chocolate, maple syrup, cocoa powder, vanilla extract, and sea salt to the blender with the avocados.
  4. Blend until the mixture is smooth and creamy, stopping to scrape down the sides as needed.
  5. Taste the mousse and adjust the sweetness if desired by adding more maple syrup.
  6. Scoop the mousse into serving bowls and refrigerate for at least 1 hour before serving.

Notes

  • For a twist, add a pinch of cinnamon or cayenne to the mousse.
  • Garnish with fresh berries or chopped nuts for extra texture.
  • This mousse can be made a day ahead; store in the refrigerator.
