Avocados are often treated with multiple pesticides; going organic reduces exposure. Cocoa powder can also have residues — opt for organic if available.
Ingredients
- 2 ripe avocados
- 100 g dark chocolate (at least 70% cocoa)
- 1/4 cup maple syrup
- 2 tbsp unsweetened cocoa powder
- 1 tsp vanilla extract
- a pinch sea salt
Method
- Halve the avocados, remove the pits, and scoop the flesh into a blender.
- In a heatproof bowl, melt the dark chocolate over a pot of simmering water. Stir until smooth and then let it cool slightly.
- Add the melted chocolate, maple syrup, cocoa powder, vanilla extract, and sea salt to the blender with the avocados.
- Blend until the mixture is smooth and creamy, stopping to scrape down the sides as needed.
- Taste the mousse and adjust the sweetness if desired by adding more maple syrup.
- Scoop the mousse into serving bowls and refrigerate for at least 1 hour before serving.
Notes
- For a twist, add a pinch of cinnamon or cayenne to the mousse.
- Garnish with fresh berries or chopped nuts for extra texture.
- This mousse can be made a day ahead; store in the refrigerator.
