Dates, almonds, and walnuts are not part of the high-residue produce, so the organic upgrade is moderate here. However, choose organic for better flavor from the nuts.
Ingredients
- 2 cups pitted Medjool dates
- 1 cup raw almonds
- 1 cup raw walnuts
- 1/4 cup unsweetened shredded coconut
- 1/4 cup chia seeds
- 1/2 tsp ground cinnamon
- 1/4 tsp sea salt
- 1 tsp vanilla extract
Method
- In a food processor, combine the almonds and walnuts. Pulse until roughly chopped.
- Add the dates to the processor. Blend until a sticky dough begins to form.
- Add the shredded coconut, chia seeds, cinnamon, sea salt, and vanilla extract.
- Continue to blend until the mixture is well combined and starts to clump together.
- Line an 8-inch square baking dish with parchment paper.
- Press the mixture into the prepared dish evenly, using a spatula to smooth the top.
- Refrigerate for at least 1 hour to set before cutting into bars.
Notes
- These bars can be stored in the fridge for up to two weeks.
- Feel free to substitute pecans for walnuts if preferred.
