Organic sourcing

Dates, almonds, and walnuts are not part of the high-residue produce, so the organic upgrade is moderate here. However, choose organic for better flavor from the nuts.

Ingredients

  • 2 cups pitted Medjool dates
  • 1 cup raw almonds
  • 1 cup raw walnuts
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup chia seeds
  • 1/2 tsp ground cinnamon
  • 1/4 tsp sea salt
  • 1 tsp vanilla extract

Method

  1. In a food processor, combine the almonds and walnuts. Pulse until roughly chopped.
  2. Add the dates to the processor. Blend until a sticky dough begins to form.
  3. Add the shredded coconut, chia seeds, cinnamon, sea salt, and vanilla extract.
  4. Continue to blend until the mixture is well combined and starts to clump together.
  5. Line an 8-inch square baking dish with parchment paper.
  6. Press the mixture into the prepared dish evenly, using a spatula to smooth the top.
  7. Refrigerate for at least 1 hour to set before cutting into bars.

Notes

  • These bars can be stored in the fridge for up to two weeks.
  • Feel free to substitute pecans for walnuts if preferred.
