Organic sourcing

Berries can be high in pesticide residues, so it's worth sourcing them organic. Greek yogurt is low-residue, and the organic boost is modest. Pistachios matter less in terms of residues.

Ingredients

  • 2 cups plain Greek yogurt
  • 3 tbsp honey
  • 1 tsp vanilla extract
  • 1/2 cup strawberries, sliced
  • 1/2 cup blueberries
  • 1/2 cup raspberries
  • 1 tbsp pistachios, chopped

Method

  1. Line a baking sheet with parchment paper.
  2. In a bowl, mix the Greek yogurt, honey, and vanilla extract until smooth.
  3. Spread the yogurt mixture evenly over the parchment paper, about 1/4 inch thick.
  4. Scatter the strawberries, blueberries, and raspberries evenly over the yogurt.
  5. Sprinkle the chopped pistachios on top.
  6. Place the baking sheet in the freezer for about 2 hours or until set.
  7. Once frozen, break the yogurt bark into pieces.
  8. Store the pieces in an airtight container in the freezer.

Notes

  • Use any combination of berries as preferred or available.
  • Substitute pistachios with walnuts or almonds if desired.
  • Sweeten yogurt to taste if using berries that are less ripe.
