Organic sourcing
Berries can be high in pesticide residues, so it's worth sourcing them organic. Greek yogurt is low-residue, and the organic boost is modest. Pistachios matter less in terms of residues.
Ingredients
- 2 cups plain Greek yogurt
- 3 tbsp honey
- 1 tsp vanilla extract
- 1/2 cup strawberries, sliced
- 1/2 cup blueberries
- 1/2 cup raspberries
- 1 tbsp pistachios, chopped
Method
- Line a baking sheet with parchment paper.
- In a bowl, mix the Greek yogurt, honey, and vanilla extract until smooth.
- Spread the yogurt mixture evenly over the parchment paper, about 1/4 inch thick.
- Scatter the strawberries, blueberries, and raspberries evenly over the yogurt.
- Sprinkle the chopped pistachios on top.
- Place the baking sheet in the freezer for about 2 hours or until set.
- Once frozen, break the yogurt bark into pieces.
- Store the pieces in an airtight container in the freezer.
Notes
- Use any combination of berries as preferred or available.
- Substitute pistachios with walnuts or almonds if desired.
- Sweeten yogurt to taste if using berries that are less ripe.
