Organic sourcing
Berries and peaches are on the Dirty Dozen list - purchase these organic if possible. Walnuts have a harder shell, so the organic benefit is modest.
Ingredients
- 2 cups Greek yogurt
- 2 tbsp honey
- 1/2 cup walnuts
- 1 cup seasonal fruit, such as berries or sliced peaches
- 2 tsp ground cinnamon
Method
- Toast the walnuts in a dry skillet over medium heat for 3-4 minutes until fragrant. Cool briefly and chop coarsely.
- In a bowl, mix the Greek yogurt with half of the honey until smooth.
- Divide the yogurt mixture into two serving bowls or glasses.
- Top the yogurt with chopped walnuts, seasonal fruit, and a sprinkle of cinnamon.
- Drizzle the remaining honey over each parfait before serving.
Notes
- Use any seasonal fruit you prefer or have on hand.
- Replace walnuts with almonds or pecans if desired.
