Asparagus benefits from being bought organic since it's grown directly in the soil and is exposed to pesticides. Lemons are also on the Dirty Dozen list, so organic is preferable.
Ingredients
- 500 g asparagus
- 2 tbsp extra-virgin olive oil
- 1 lemon, zested
- to taste sea salt
- to taste freshly ground black pepper
Method
- Trim the woody ends of the asparagus.
- Coat the asparagus with the olive oil in a shallow dish.
- Preheat the grill to a medium-high setting.
- Grill the asparagus for 3-4 minutes on each side until charred and tender.
- Transfer the asparagus to a serving plate and sprinkle with lemon zest.
- Season with sea salt and freshly ground black pepper to taste.
Notes
- Serve with a squeeze of lemon juice for extra zest.
- Pair with grilled meats or other vegetables for a complete meal.
