Sardines are low-residue; buying organic makes less difference. Lemons can absorb pesticide residue through their skin — worth sourcing organic if using zest. Garlic is generally low-residue.
Ingredients
- 8 sardines, cleaned and scaled
- 3 tbsp extra-virgin olive oil
- 1 lemon, juiced
- 2 cloves garlic, minced
- to taste sea salt
- to taste black pepper
- 1 tbsp fresh parsley, chopped
Method
- Preheat the grill to medium-high heat.
- Pat the sardines dry with paper towels and place them on a plate.
- In a small bowl, combine the olive oil, lemon juice, minced garlic, sea salt, and black pepper.
- Brush the sardines liberally with the olive oil and lemon mixture.
- Place the sardines on the hot grill and cook for 3-4 minutes on each side, until the flesh is opaque and firm to the touch.
- Transfer the grilled sardines to a serving platter.
- Sprinkle the fresh parsley over the sardines before serving.
Notes
- Serve with crusty bread or a side of grilled vegetables.
- For a smoky flavor, grill over charcoal if possible.
- Lime can be used instead of lemon for a different citrus note.
