Ingredients
- 200 g fresh ginger root
- 2 lemons
- 1 lime
- 4 cups water
- 1 tsp active dry yeast
- to taste ice cubes
- to taste fresh mint leaves
Method
- Peel and grate the ginger root.
- Juice the lemons and lime, straining out seeds.
- Combine grated ginger, citrus juices, and 4 cups of water in a large pot.
- Bring the mixture to a boil, then reduce heat and simmer for 5 minutes.
- Remove from heat and let it cool to room temperature.
- Strain the liquid through a fine sieve into a large bowl or pitcher.
- Add the yeast to the strained liquid, stirring well to dissolve.
- Transfer to a clean bottle or jar, sealing it tightly.
- Allow the ginger beer to ferment at room temperature for 24 to 48 hours, checking carbonation level every 12 hours.
- Chill the ginger beer before serving over ice and garnished with fresh mint.
Notes
- Adjust ginger quantity to taste for milder or spicier flavor.
- Store the ginger beer in the refrigerator once it reaches desired carbonation.
- For a sweeter version, consider adding honey or another sweetener.
