Organic sourcing
Figs and lemons are worth sourcing organic; their softer skins can absorb more pesticide residues according to the EWG Dirty Dozen logic.
Ingredients
- 8 fresh figs
- 2 tbsp honey
- 1 tbsp lemon juice
- 1 tsp ground cinnamon
- 1 cup Greek yogurt
- 2 tbsp chopped walnuts
- 1 tsp vanilla extract
Method
- Preheat the oven to 375°F (190°C).
- Wash the figs and slice them in half lengthwise.
- Place the figs cut side up in a baking dish.
- Drizzle the honey evenly over the figs.
- Sprinkle the lemon juice and cinnamon over the figs.
- Roast in the preheated oven for 15 minutes, until the figs are tender and the honey has caramelized slightly.
- In a small bowl, mix the Greek yogurt with the vanilla extract until well combined.
- Serve the roasted figs warm, topped with a dollop of vanilla Greek yogurt and sprinkled with chopped walnuts.
Notes
- Substitute almonds for walnuts if preferred.
