Organic sourcing

Eggs and goat cheese benefit from organic sourcing due to better animal welfare standards and potentially lower levels of contaminants. Onions are low-residue, so the upgrade is modest here.

Ingredients

  • 4 large eggs
  • 2 tbsp unsalted butter
  • 60 g soft goat cheese
  • 2 tbsp chopped fresh chives
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1/4 tsp sea salt
  • to taste freshly ground black pepper

Method

  1. Crack the eggs into a bowl and whisk until well beaten.
  2. Melt the butter in a nonstick skillet over medium heat.
  3. Add the chopped onion and garlic to the skillet and sauté until the onion is translucent.
  4. Pour the beaten eggs into the skillet with the onions and garlic, and reduce the heat to low.
  5. Gently stir the eggs with a spatula, cooking slowly until they are softly set.
  6. Add the goat cheese and chives to the eggs, stirring gently just until the cheese begins to melt.
  7. Season with sea salt and freshly ground black pepper to taste, then serve immediately.

Notes

  • Substitute chives with fresh parsley or dill if preferred.
  • Use coconut oil instead of butter for a different flavor.
  • Pair with avocado for additional healthy fats.
