Organic sourcing

Chicken and lettuce are worth sourcing organic; organic chicken often means better animal welfare, and leafy greens like lettuce are on the Dirty Dozen list.

Ingredients

  • 500 g boneless, skinless chicken breast
  • 2 tbsp extra-virgin olive oil
  • 1/4 cup hot sauce
  • 2 tbsp unsalted butter
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • to taste sea salt
  • to taste black pepper
  • 1 head romaine lettuce
  • 1/2 cup crumbled blue cheese
  • 1/4 cup chopped fresh parsley

Method

  1. Cut the chicken breast into bite-sized pieces.
  2. Heat the olive oil in a pan over medium heat.
  3. Add the chicken pieces, season with salt and pepper, and cook until golden and cooked through.
  4. In a small saucepan, melt the butter, then stir in the hot sauce, garlic powder, and onion powder.
  5. Toss the cooked chicken in the buffalo sauce until well coated.
  6. Separate large leaves from the romaine head to use as wraps.
  7. Fill each lettuce leaf with the buffalo chicken mixture.
  8. Sprinkle blue cheese and parsley over the chicken before serving.

Notes

  • For extra spice, add more hot sauce.
  • Use iceberg lettuce for a more traditional wrap.
  • Store leftovers in separate containers to keep the lettuce crisp.
