Organic sourcing

Cauliflower benefits from being organic as it often ranks high in pesticide residue. Look for organic cheese to avoid additives and hormones.

Ingredients

  • 1 large head cauliflower
  • 1 tbsp butter
  • 1 cup heavy cream
  • 2 cups grated cheddar cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • to taste salt and black pepper
  • 1/4 cup grated parmesan cheese
  • 1 tbsp chopped fresh parsley

Method

  1. Preheat the oven to 375°F (190°C).
  2. Cut the cauliflower into bite-sized florets and steam until tender, about 5-7 minutes.
  3. Drain the cauliflower and set aside.
  4. In a saucepan, melt the butter over medium heat.
  5. Add the heavy cream, garlic powder, and onion powder, stirring until the mixture simmers.
  6. Add 1 1/2 cups of cheddar cheese to the cream mixture, stirring until melted and smooth.
  7. Season the cheese sauce with salt and pepper to taste.
  8. Place the cauliflower in an ovenproof dish and pour the cheese sauce over it, mixing gently to coat all pieces.
  9. Top with the remaining cheddar and parmesan cheese.
  10. Bake until the cheese is bubbly and golden brown, about 15 minutes.
  11. Garnish with chopped parsley before serving.

Notes

  • For a smoky flavor, use smoked cheddar cheese.
  • Cauliflower can be cut and steamed a day ahead for quick assembly.
  • Perfect as a side dish for roasted meats.
