Organic sourcing
Medjool dates and shredded coconut both benefit from organic sourcing due to potential pesticide residues. Cashews have a thick shell, so the organic impact is less critical.
Ingredients
- 1 cup pitted Medjool dates
- 1 cup raw cashews
- 1/2 cup unsweetened shredded coconut
- 1 tbsp matcha green tea powder
- 1 tbsp coconut oil
- 1/2 tsp vanilla extract
- 1 pinch sea salt
Method
- In a food processor, combine the dates and cashews. Process until a sticky mixture forms.
- Add the shredded coconut, matcha powder, coconut oil, vanilla extract, and sea salt.
- Blend the mixture until it is well combined and forms a dense dough.
- Scoop small portions and roll them into balls about an inch in diameter.
- If desired, roll the balls in additional shredded coconut or a bit of matcha powder for coating.
Notes
- Store in an airtight container in the refrigerator for up to 1 week.
- Substitute almonds for cashews if preferred.
- Add a tsp of honey if additional sweetness is desired.
