Organic sourcing

Medjool dates and shredded coconut both benefit from organic sourcing due to potential pesticide residues. Cashews have a thick shell, so the organic impact is less critical.

Ingredients

  • 1 cup pitted Medjool dates
  • 1 cup raw cashews
  • 1/2 cup unsweetened shredded coconut
  • 1 tbsp matcha green tea powder
  • 1 tbsp coconut oil
  • 1/2 tsp vanilla extract
  • 1 pinch sea salt

Method

  1. In a food processor, combine the dates and cashews. Process until a sticky mixture forms.
  2. Add the shredded coconut, matcha powder, coconut oil, vanilla extract, and sea salt.
  3. Blend the mixture until it is well combined and forms a dense dough.
  4. Scoop small portions and roll them into balls about an inch in diameter.
  5. If desired, roll the balls in additional shredded coconut or a bit of matcha powder for coating.

Notes

  • Store in an airtight container in the refrigerator for up to 1 week.
  • Substitute almonds for cashews if preferred.
  • Add a tsp of honey if additional sweetness is desired.
