Ingredients
- 4 cod fillets
- 2 tbsp whole-grain mustard
- 1 tbsp Dijon mustard
- 2 tbsp fresh parsley, finely chopped
- 1 tbsp fresh dill, finely chopped
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- 2 tbsp extra-virgin olive oil
- to taste sea salt
- to taste freshly ground black pepper
Method
- Preheat the oven to 200°C (400°F).
- Pat the cod fillets dry with a paper towel and season them with salt and pepper on both sides.
- In a small bowl, mix together the whole-grain mustard, Dijon mustard, chopped parsley, dill, and minced garlic.
- Add the lemon juice and olive oil to the mustard mixture; stir until well combined.
- Place the cod fillets on a baking sheet lined with parchment paper.
- Spread the mustard and herb mixture evenly over the top of each fillet.
- Bake in the preheated oven for 15-20 minutes, until the fish flakes easily with a fork.
Notes
- For a milder flavor, use all Dijon mustard.
- Serve with steamed vegetables or a green salad.
- Leftovers can be kept in the fridge for up to 2 days.
