Organic sourcing
Eggs are worth sourcing organic due to better farming practices and the benefits of pasture-raised conditions for hens.
Ingredients
- 4 large eggs
- to taste sea salt
Method
- Fill a small pot with enough water to cover the eggs by about 1 inch.
- Bring the water to a gentle boil over medium-high heat.
- Once boiling, gently lower the eggs into the water using a spoon.
- Boil the eggs for exactly 6 minutes for a very soft center, or 7 minutes for a slightly firmer yolk.
- Immediately remove the eggs from the pot and transfer them to a bowl of ice water to stop the cooking.
- Let the eggs cool for about 2 minutes, then gently peel under running water.
- Serve the eggs halved or whole, sprinkled with sea salt to taste.
Notes
- Use a spoon to lower the eggs to prevent cracking.
- For easier peeling, use eggs that are a few days old.
- Serve with greens for a light, balanced meal.
