Organic sourcing
Apples are on the Dirty Dozen, so sourcing organic reduces pesticide exposure. Sage and onions are less critical, but organic can enhance freshness and flavor quality.
Ingredients
- 4 bone-in pork chops
- 2 tbsp extra-virgin olive oil
- 2 tsp salt
- 1 tsp black pepper
- 2 large apples, cored and sliced
- 8 fresh sage leaves
- 1 lemon, juiced
- 1 tbsp honey
- 1 medium onion, sliced
Method
- Preheat the oven to 375°F (190°C).
- Season the pork chops on both sides with salt and black pepper.
- Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat.
- Sear the pork chops for about 3-4 minutes on each side until browned.
- Transfer the pork chops to a plate.
- In the same skillet, add another tablespoon of olive oil.
- Add the onion slices and cook for 2 minutes until translucent.
- Add the apple slices and sage leaves to the skillet.
- Drizzle with lemon juice and honey, then toss to combine.
- Return the pork chops to the skillet, nestling them among the apples and onions.
- Transfer the skillet to the preheated oven.
- Roast for 20-25 minutes or until the pork chops are cooked through and apples are tender.
Notes
- For a sweeter dish, use honeycrisp apples.
- Pair with a side salad or roasted vegetables.
- Make sure to use an oven-safe skillet to avoid transferring the mixture.
