Organic sourcing

Red onions are a good choice to buy organic as they are sometimes exposed to pesticides. Apple cider vinegar is also a good option to buy organic for better quality.

Ingredients

  • 1 medium red onion
  • 1 cup water
  • 1/2 cup apple cider vinegar
  • 1 tbsp maple syrup
  • 1 1/2 tsp sea salt
  • 1/2 tsp black peppercorns
  • 1/2 tsp whole coriander seeds

Method

  1. Thinly slice the red onion into even rings.
  2. In a small saucepan, combine the water, apple cider vinegar, maple syrup, sea salt, black peppercorns, and coriander seeds.
  3. Bring the mixture to a gentle boil, then simmer for 1-2 minutes until the salt is dissolved.
  4. Remove the saucepan from heat and allow the liquid to cool slightly.
  5. Place the sliced onion in a clean jar, and pour the warm liquid over, ensuring onions are submerged.
  6. Let the jar cool to room temperature, then cover and refrigerate for at least 1 hour before serving.

Notes

  • For a sugar-free option, omit the maple syrup.
  • Use the pickled onions within two weeks for best flavor.
  • Great as a topping for tacos or sandwiches.
