Red onions are a good choice to buy organic as they are sometimes exposed to pesticides. Apple cider vinegar is also a good option to buy organic for better quality.
Ingredients
- 1 medium red onion
- 1 cup water
- 1/2 cup apple cider vinegar
- 1 tbsp maple syrup
- 1 1/2 tsp sea salt
- 1/2 tsp black peppercorns
- 1/2 tsp whole coriander seeds
Method
- Thinly slice the red onion into even rings.
- In a small saucepan, combine the water, apple cider vinegar, maple syrup, sea salt, black peppercorns, and coriander seeds.
- Bring the mixture to a gentle boil, then simmer for 1-2 minutes until the salt is dissolved.
- Remove the saucepan from heat and allow the liquid to cool slightly.
- Place the sliced onion in a clean jar, and pour the warm liquid over, ensuring onions are submerged.
- Let the jar cool to room temperature, then cover and refrigerate for at least 1 hour before serving.
Notes
- For a sugar-free option, omit the maple syrup.
- Use the pickled onions within two weeks for best flavor.
- Great as a topping for tacos or sandwiches.
