Fresh herbs like dill, parsley, and chives benefit from being organic as they are typically high-residue crops. Lemon, on the other hand, has a thick peel, so it's less critical.

Ingredients

  • 1 cup full-fat coconut milk
  • 1/2 cup homemade mayonnaise
  • 2 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh chives, chopped
  • 1 tbsp fresh parsley, chopped
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt
  • to taste freshly ground black pepper

Method

  1. In a medium bowl, combine the coconut milk and mayonnaise.
  2. Add the fresh lemon juice and minced garlic to the mixture.
  3. Gently whisk in the chopped dill, chives, and parsley.
  4. Sprinkle in the onion powder and garlic powder, stirring to combine.
  5. Season with sea salt and freshly ground black pepper to taste.
  6. Adjust seasoning if necessary, then chill the dressing for a few minutes before serving.

Notes

  • Use fresh herbs for the best flavor.
  • If the dressing is too thick, thin with more coconut milk.
  • Store in the fridge for up to a week.
