Organic sourcing

Beets are root vegetables, and going organic reduces pesticide exposure, especially since they grow underground and can absorb chemicals from soil.

Ingredients

  • 4 medium beets, scrubbed and trimmed
  • 2 tbsp extra-virgin olive oil
  • to taste sea salt
  • to taste black pepper
  • 100 g goat cheese, crumbled
  • 2 tbsp fresh dill, chopped
  • 1 tbsp apple cider vinegar

Method

  1. Preheat the oven to 400°F (200°C).
  2. Wrap each beet in aluminum foil, drizzle with some olive oil, and season with salt and pepper.
  3. Roast the beets on a baking sheet for about 1 hour, or until tender when pierced with a fork.
  4. Let the beets cool slightly, then peel and slice them thinly.
  5. Arrange the sliced beets on a serving platter and drizzle with apple cider vinegar.
  6. Sprinkle the crumbled goat cheese over the beets.
  7. Garnish with fresh dill before serving.

Notes

  • For a variation, try replacing goat cheese with feta.
  • Beets can be roasted a day ahead and refrigerated.
  • Serve with rye bread for a complete Nordic meal.
