Beets are root vegetables, and going organic reduces pesticide exposure, especially since they grow underground and can absorb chemicals from soil.
Ingredients
- 4 medium beets, scrubbed and trimmed
- 2 tbsp extra-virgin olive oil
- to taste sea salt
- to taste black pepper
- 100 g goat cheese, crumbled
- 2 tbsp fresh dill, chopped
- 1 tbsp apple cider vinegar
Method
- Preheat the oven to 400°F (200°C).
- Wrap each beet in aluminum foil, drizzle with some olive oil, and season with salt and pepper.
- Roast the beets on a baking sheet for about 1 hour, or until tender when pierced with a fork.
- Let the beets cool slightly, then peel and slice them thinly.
- Arrange the sliced beets on a serving platter and drizzle with apple cider vinegar.
- Sprinkle the crumbled goat cheese over the beets.
- Garnish with fresh dill before serving.
Notes
- For a variation, try replacing goat cheese with feta.
- Beets can be roasted a day ahead and refrigerated.
- Serve with rye bread for a complete Nordic meal.
