Organic sourcing
Parsnips are generally not heavily sprayed with pesticides, but sourcing organic can enhance taste. Thyme benefits from being organic as herbs may have pesticide residues.
Ingredients
- 500 g parsnips
- 2 tbsp extra-virgin olive oil
- 2 tbsp honey
- 1 tsp fresh thyme leaves
- to taste sea salt
- to taste black pepper
Method
- Preheat the oven to 200°C (400°F).
- Peel the parsnips and cut them into even-sized batons.
- In a large bowl, combine the parsnips, olive oil, honey, thyme leaves, sea salt, and black pepper until well coated.
- Spread the parsnips onto a baking sheet in a single layer.
- Roast the parsnips in the oven for 25-30 minutes, turning once halfway through, until golden and tender.
- Serve warm as a side dish.
Notes
- Substitute maple syrup for honey to make it vegan.
- Pair with roasted meats or as part of a vegetable platter.
