Organic sourcing

Parsnips are generally not heavily sprayed with pesticides, but sourcing organic can enhance taste. Thyme benefits from being organic as herbs may have pesticide residues.

Ingredients

  • 500 g parsnips
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp honey
  • 1 tsp fresh thyme leaves
  • to taste sea salt
  • to taste black pepper

Method

  1. Preheat the oven to 200°C (400°F).
  2. Peel the parsnips and cut them into even-sized batons.
  3. In a large bowl, combine the parsnips, olive oil, honey, thyme leaves, sea salt, and black pepper until well coated.
  4. Spread the parsnips onto a baking sheet in a single layer.
  5. Roast the parsnips in the oven for 25-30 minutes, turning once halfway through, until golden and tender.
  6. Serve warm as a side dish.

Notes

  • Substitute maple syrup for honey to make it vegan.
  • Pair with roasted meats or as part of a vegetable platter.
