Ingredients
- 500 g ground turkey
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, finely diced
- 1 carrot, grated
- 1 egg
- 2 tbsp almond flour
- 1 tbsp Worcestershire sauce (check Whole30 compliance)
- 1 tsp dried thyme
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1/2 cup tomato paste
- 1 tbsp apple cider vinegar
- 1 tbsp unsweetened apple juice
- 1 tbsp extra-virgin olive oil
Method
- Preheat the oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat.
- Add the onion, garlic, red bell pepper, and carrot, sauté until soft.
- In a mixing bowl, combine the sautéed vegetables with ground turkey.
- Add egg, almond flour, Worcestershire sauce, thyme, salt, and pepper.
- Mix until well combined, then shape into a loaf on a lined baking sheet.
- In a small bowl, combine tomato paste, apple cider vinegar, and apple juice.
- Spread the tomato glaze evenly over the meatloaf.
- Bake in the preheated oven for 50 minutes or until cooked through.
- Allow to rest for 10 minutes before slicing and serving.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the glaze.
- Pair with roasted vegetables or a fresh salad for a complete meal.
